Black Forest Mocha Chia Seed Pudding Recipe
Macros per serving: 244 Calories, 22g Fat, 6g Protein, 8g Net Carbs (with cherries), 2g Net Carbs (without cherries)
Ingredients: (makes 2 servings)
1/4 cup heavy cream (or half & half, whichever you prefer)
3/4 strong brewed coffee, cooled to room temperature
3 tablespoons chia seeds
2 tablespoons unsweetened cocoa powder
1 1/2 teaspoons granulated stevia or sugar-free sweetener of choice
1/2 teaspoon pure vanilla extract
1/8 teaspoon pure almond extract
1 pinch sea salt
10 almonds, toasted and chopped (for garnish)
10 cherries, washed, pitted, and halved (for garnish)
*cherries are optional and can be omitted for a lower carbohydrate count
Directions:
1. The night before serving, stir together cream, coffee, chia seeds, cocoa powder, sweetener, vanilla extract, almond extract and salt in a medium-sized bowl. Cover and allow to soak up in the fridge overnight.
2. Blend mixture in a food processor until smooth.
3. Transfer puree into 2 serving glasses; top with almonds and cherries (optional) and serve cold.
