Moroccan Style Sautéed Spinach with Eggs Recipe
Ingredients:
1 tablespoon olive oil
1 clove of garlic, chopped finely
1/2 cup canned chickpeas, drained and rinsed
1 small cucumber, finely diced
½ teaspoon garam masala
2 cups fresh spinach
1/8 teaspoon salt
1/8 teaspoon pepper
1 teaspoon butter
2 large eggs
Directions:
1. Heat olive oil in a pan over medium-high heat and cook garlic until fragrant. Add chickpeas and cook for 3-4 minutes or until beans are soft. Mash the cooked beans and stir in cucumber and garam masala and cook for another 4-5 minutes or until cucumber is softened.
2. Add spinach into cucumber and chickpea mixture and cook for 1-2 minutes or until slightly wilted. Season with salt and pepper to taste. Make a hole in the middle of the mixture with a spoon and add butter into the hollow. Once butter has melted, crack eggs into the hole.
3. Cover the pan and cook for 4 minutes or until egg whites are set around the yolks.
Transfer to a plate and serve.
