Keto Cinnamon Rolls Directions

For the dough:

1. Add almond flour, coconut flour, xanthan gum, baking powder and salt into a food processor and pulse until thoroughly combined.

2. Pour in apple cider vinegar while the food processor is running. Do this until it has been distributed evenly. Add the egg followed by the water. Stop the food processor once the dough begins to form a ball. The dough will be sticky when touched.

3. Wrap the dough in cling-wrap and knead it through the plastic until relatively smooth. Allow the dough to rest for 10 minutes or store it in the fridge for up to 5 days if not needed immediately.

For the Cinnamon Rolls:

1. Preheat oven to 350°F. Line baking tray with a silicone baking mat or parchment paper.

2. While waiting for the oven to reach temp., roll out the rested dough between two sheets of parchment paper with a rolling pin until you get a sheet roughly 10×10 inches in size. Square-off the dough by trimming the uneven edges, patch them up and keep rolling until evenly sized. Set aside.

3. Mix together cinnamon and sweetener to use as filling for the cinnamon roll knots.

4. Brush the rolled-out dough with melted butter and sprinkle with the with the cinnamon sweetener mixture. Fold the dough in half and cut into 8-10 strips with a pastry cutter. Roll strips with the cinnamon filling inside and pinch the end to prevent it from unravelling. You can freeze the cinnamon rolls at this point for a month or two, and bake straight from the freezer (adding a few more minutes in the oven) at a later date.

5. Place the rolls in prepared tray and bake for 8-12 minutes until they just begin to brown. You want to only bake them briefly so they stay moist and doughy, unless you prefer hard rolls.

6. While the rolls are baking in the oven, cream together (with an electric mixer) the cream cheese and butter until light and fluffy. Beat in the powdered sweetener, vanilla extract and salt. If you want it more of a syrupy consistency, add a few teaspoons of almond milk to the mixture to lighten it.

The rolls are best served warm, straight from the oven, with a drizzle of cream cheese glaze if desired.
