Pulled Pork Hash Recipe
Macros per serving: 354 Calories, 22g Fat, 21g Protein, 8g Net Carbohydrates
Ingredients: (makes 2 servings)
2 tbsp fat of choice (can be butter, lard or olive oil)
1 turnip, diced
½ tsp paprika
¼ tsp salt
¼ tsp black pepper
¼ tsp garlic powder
3 Brussels sprouts, halved
1 cup chopped kale, (about 2-3 leaves)
2 tbsp red onion, diced
3 ounces left-over or store bought pulled pork
2 eggs
Directions:
1. Heat oil in a large cast iron skillet set over medium-high heat. Saute turnip, red onion and spices until turnip is tender and onion is translucent.
2. Add the Brussels sprouts, and chopped kale and cook for another 2-3 minutes until vegetables start to soften. Add pulled pork and cook for another 2-3 minutes, stirring occasionally to incorporate.
3. Make 2 holes in the mixture and crack-in eggs into the divots. Cover and cook until whites are set.
