Eggs Baked in Portobello Mushroom Recipe
Ingredients:
4 large Portobello mushrooms
Olive oil spray
½ teaspoon kosher salt, divided
½ teaspoon black pepper, divided
½ teaspoon garlic powder
4 medium eggs
2 tablespoons grated parmesan cheese
4 tablespoons chopped parsley for garnish
Directions:
1. Preheat broiler on high. Set oven rack in the middle of the oven. Line baking sheet with foil.
2. Wipe the mushrooms clean with a paper towel. Twist off the stem of each mushroom, taking care not to tear a hole in them. Gently scrape off the gills with a spoon. Spray the mushroom caps with olive oil and season them with Kosher salt, pepper and garlic powder. Broil the mushrooms on each side until just tender.
3. Remove mushrooms from oven and drain any liquids. Switch oven from broil to bake and heat up to 400 degrees Fahrenheit.
4. Break an egg into each mushroom cap, sprinkle with cheese and bake for 15 minutes until eggs are cooked and set.
5. Sprinkle the eggs with the remaining salt and pepper. Garnish with parsley and serve.
