Anchovies are small, saltwater fish that are classified as oily fish and are often available preserved in oil or salt. They are a popular ingredient in various gourmet sauces including Worcestershire sauce, versions of Café de Paris butter and Caesar’s salad dressing, and are also used as pizza toppings in some places.
